In the first round, the contestants must create a cupcake based on taste alone with a theme associated including a twist ingredient(s) in 45 minutes. For example, a date-night themed cupcake must include various aphrodisiacs, such as oysters, basil, dark chocolate or champagne. The second round is based on both taste and presentation. In 75 minutes, the contestants must make 3 different cupcakes, each showcasing a different taste with an outstanding presentation.

The show invites cupcake bakers and pastry chefs from all over the United States to compete in the 3 rounds. Each episode has a theme. The themes that have been mentioned so far have been based on a golf tournament, a Seaworld birthday party for an orca, a "match-making" aphrodisiac party, an Ace of Cakes 100th episode celebration, "Survival of the Fittest" theme, an autistic charity event and at a film festival.

It's cupcake vs. cupcake in Food Network's tastiest competition yet! Each week on Cupcake Wars, four of the country's top cupcake bakers face off in three elimination challenges until only one decorator remains. The sweet prize: $10,000 and the opportunity to showcase their cupcakes at the winning gig.

The ladies of Philadelphia's Sweet Freedom Bakery will be showing off their goodies. Tonight on Food Network's CUPCAKE WARS the bakery's co-owners will show off their skills against three other bakers. In the competition that pits cupcake against cupcake, the victor after three elimination challenges receives a $10,000 prize and is featured at the episode's main event.

Coming up on Sweet Freedom Bakery's one year anniversary, joining the show's winners' circle would surely be a huge triumph to take into the New Year. Will they bake the judges happy? Find out tonight at 9pm on Food Network's CUPCAKE WARS.

Earlier this summer, I interview ed Sprinkles Cupcake founder Candace Nelson (left) for a story connected to the episode of Food Network's Tuesday-night reality-competition series "Cupcake Wars" that featured "Ace of Cakes" baker Duff Goldman as a guest judge. Nelson was kind enough to invite me to drop by the Beverly Hills location of Sprinkles Cupcakes -- described by the Los Angeles Times as "the progenitor of the haute cupcake craze" -- to sample the wares.

Although Georgetown Cupcake is rather pinker and more overtly feminine than the simpler, more muted Sprinkles aesthetic, LaMontagne, just like Nelson, gave up a career in finance to make cupcakes (her sister did PR for Gucci). Talking in a coffeeshop across the street from her crowded South Santa Monica Boulevard shop -- where we were interrupted by the unsettling rolling of a reasonably sized earthquake, leading me to wonder whether the Earthquake Cupcake will ever be on the menu of a California cupcakery, and what flavor it would be -- Nelson says she has no regrets.

"Sometimes we're thinking, 'Hmmmm,'" she says. "But we're doing what we love to do, and we're very fortunate to be able to make a living doing it. There are no complaints." Asked about the appeal of the diminutive confections, Nelson says, "My favorite thing is the universal appeal of the cupcake, and the fact that everyone can participate in it. They're very democratic in that way. "Who hasn't had one? Who doesn't have an opinion? Even the anti-cupcake sentiment -- great, so you hate a cupcake. "Everyone's talking about it, because everyone can. I can get in a cab and have a very intelligent conversation about what I do.
